chickpea salad with balsamic-lime dressing.







This is so dead simple. I made this to have a bit of a snack or light lunch in the refrigerator as we start school this week. It would also be a great take-away lunch as it is not fragile & can be prepared ahead of time. This would be a great salad for the summer too, as it is minimal, easy & tasty.

chickpea salad.
serves 4 as a side

3 cups cooked chickpeas, rinsed & drained
1/4 cup sweet onion, chopped
1/4 cup cilantro, chopped
1 chili, deseeded & chopped
sea salt & cracked pepper
1/2-3/4 serving of balsamic-lime dressing

  1. Toss all ingredients into a large bowl. You may want to eventually add all the dressing to the chickpea salad, but just kind of feel it out to see what your preference is.

makes about 1/2 cup

2 TBL Balsamic vinegar
2 TBL agave syrup
1 TBL lime juice
6 TBL olive oil
sea salt & cracked pepper

  1. Add all ingredients into a mason jar & shake vigorously.
