This little morsels are another recipe adapted from the Sprouted Kitchen. They kind of remind me, in a way, of a healthier version of a peanut butter ball. These are a healthy little sweet treat for an afternoon pick-me-up or a little something after dinner with a cup of coffee or tea. Or, if you are like me, they are perfect for a sneaky swipe of something sweet when I walk by the refrigerator. The other great thing about them is they take about 10 minutes from start to finish...brilliant.

makes about 16 small cookies
Adapted from the Sprouted Kitchen
1 cup walnuts (SP used almonds here)
1 cup dates, pitted
1/2 cup natural peanut butter
1/4 cup of dark chocolate, chopped
1 tsp. pure vanilla
1/2 tsp. cinnamon
(a pinch of salt if your pb is not salted already)
- In a food processor, pulse the walnuts until a coarse meal forms. Add the vanilla, cinnamon, dates, peanut butter, chocolate & salt if using. Pulse everything together until they are generally uniform in color and texture. The mixture should stick together when pressed between your fingers. If it seems dry, add another TBL of peanut butter.
- Roll dough into tablespoon size balls. Press them down with a fork to make a cross hatch. Repeat with remaining dough. Cover and keep chilled in the fridge.
