spring rolls. for spring.





Spring rolls are a great lunch or appetizer. You can fill them with anything you love or have on hand.They are healthy & can be conducive to your dietary needs or preferences (i.e. these are gluten-free & vegan). Rice wrappers are easy to use (if I can do it, you can do it!), just follow the package directions; besides they are so cheap & they will last quite a few batches.

The spring rolls pictured above have rices noodles, pickled ginger, scallions, peas, shredded red cabbage & sliced red pepper with a squeeze of lime--really you can do anything. The dipping sauce is dead simple & the recipe is listed below. Set up the ingredients buffet-style & try doing this with a group of friends or with kids. It's fun, easy & everyone can pick what they like...it's all good.

spring roll dipping sauce.

2 TBL rice vinegar
5 TBL tamari
1 TBL honey
2 tsp spicy sesame oil

--Whisk together & get dipping.
