christmas-time. in greenville.

We had a lovely, relaxing Christmas in Greenville, ME. Loads of beautiful food, family & friends. Christmas Eve we made Jamie Oliver's Pollo alla Caccatora, an orange almond salad (recipe as follows) & Peroni --italian pilsners. Needless to say, there were absolutely no left-overs. To top it all off, it was a truly beautiful white Christmas.

orange- almond salad with shallot vinaigrette. 


the dressing:
2 TBL white wine vinegar
1 small shallot, diced
a pinch of sea salt
1 TBL pure maple syrup
6 TBL extra-virgin olive oil
  1. Add all ingredients in a jam jar & shake vigorously. 

the salad:
4 cups mixed greens
1/2 cup scallions, chopped
1/2 cup mandarin oranges or clementines, chopped
1/4 cup sliced almonds, toasted
a pinch of cracked pepper
  1. Mix the ingredients together in a large bowl.
  2. Right before serving, drizzle some dressing over the salad & mix. Serve dressing to taste.

Below is my mum's most epic, comforting fresh haddock, baked potatoes & peas. So perfect for a cold, snowy Christmas evening watching the entire second season of Bored to Death.
