Sometimes when you do not have any food in your house & you really have to scrounge for a meal--it ends up being bangin'! This breakfast/lunch/dinner item's ingredients basically all came from by freezer--ooo, kind of like a frozen dinner... but is inexpensive & a crowd pleaser.
I made this for breakfast during our semester finals week. It was just the perfect pick me up when all of my brain cells were slowly dying from end of the semester studying & writing &, yes, the last thing I really wanted to do was cook! gasp!
Basically, this is simple, inexpensive, & of course good. It is perfect for anything to an appetizer to dinner (with a salad or grilled vegetables); it is also easy enough to manipulate to what you have at home.
Spinach & Goat Cheese Rolls
serves 4
1 sheet of puff pastry, defrosted
1 egg, beaten
Flour for dusting
1 box frozen spinach, defrosted & squeezed of liquid
1 clove garlic, grated
1/3 cup pecorino, grated
2 sprigs thyme, leaves picked
Sea salt & cracked pepper to taste
4 oz goat cheese
6 slices turkey, chicken or ham, from deli (optional if you want it to be vegetarian-- try sun-dried tomatoes packed in olive oil instead)
1. Preheat the oven to 400 degrees. In a bowl combine spinach, garlic, Locatelli, thyme & seasoning.
2. Roll out the pastry on a floured surface until 1/4" thick. Spread goat cheese on the pastry leaving around 1" edge. Then cover the cheese with the deli slices.
3. Sprinkle the spinach mixture over the deli slices. Roll the pastry from the shorter edge. Cut about 10-12 slices.
4. Place cut side down on the baking tray and brush with beaten egg. Bake for 17-18 minutes or until beautifully golden. Let cool for about five minutes before serving.
