c is for cookie. oatmeal chocolate chunk coconut cookies. {vegetarian}

Cookies. Big, small. Chewy, crunchy. Cakey, buttery. They are my weakness.Damn you Cookie Monster for instilling the love for cookies in the hearts of children at such a young age!

Here is a recipe conjuring some of my favorite aspects of cookiedom. I even had one for breakfast this morning while running out the door for work. Cookies & French Roast coffee!

Oatmeal Chocolate Chunk Walnut Coconut Cookies
makes 2 dozen

1 cup white spelt flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp ground cinnamon
pinch of course sea salt

1 stick butter, room temperature
2/3 cup brown sugar
1/3 cup sugar
1 organic free range egg, room temperature
1 tsp vanilla extract

1 1/4 cup rolled oats
1/2 cup dark chocolate, chopped
1/2 cup walnuts, chopped
1/4 cup shredded unsweetened coconut


1. Preheat the oven to 350 degrees. Line a baking sheet with parchment paper.

2. Combine dry ingredients in a bowl & set aside.

3. Beat the butter & sugars until pale & fluffy. Slowly add egg & vanilla. Mix in the rest of the ingredients (but don not over mix).

4. With an ice cream scoop drop dough 2" apart & bake for 14 minutes or until the edges are golden. Let cool on a wire rack...or basically just start eating them!
