Oh, so easy, cold, yummy, & healthy. A perfect treat.
instant berry & coconut sherbet.
serves 2
Adapted from Gwyneth Paltrow's It's All Good
2 cups of berries (strawberries, blueberries, raspberries, or a mix)
1/2 cup coconut milk (from a can)
2 TBL raw honey, agave nectar, or maple syrup
- Blitz the berries in a food processor until they are have a fine texture. In a separate bowl, whisk together the coconut milk & sweetener of choice. Pour a little bit of the berries in the bottom of an individual size serving bowl, then coconut milk, then more berries. Freeze for at least 2 hours. Take out 10 minutes before serving.
- Or you can mix the berries & coconut milk together to make a sherbet. If you want to do this, use frozen berries & the sherbet will be instant!
