lovely lemon pudding.


This is a really simple dessert Jediah and I watched Jamie Oliver do on his super old BBC show Oliver's Twist. Jediah really loves this, requests it, & it is great because the ingredients are pantry ingredients. I usually half the ingredients, & put them in small ramekins-- it is perfect for two. I also serve them with a dusting of icing sugar--you know, I have to keep up appearances! Another great one from Jamie.

4 TBL butter, softened
1/2 cup sugar or light brown sugar
Rind from 1 lemon 
3 TBL of the lemon juice
2 eggs, seperated
1 1/4 cup milk
1/4 cup self-raising flour (or flour of your choice with 1/2 tsp of baking powder)
a scoop of jam (your choice--I used raspberry, I have also used marmalade)
  1. Preheat the oven to 400 degrees. Butter an oven proof dish and a spread jam on the bottom. 
  2. Cream the butter, sugar and lemon rind in a mixing bowl. Add the egg yolks and flour and beat in, then add the milk and 3 tablespoons of lemon juice and mix well.
  3. Whisk the egg whites in a separate bowl until stiff, then add the rest of the mixture. Mix it all well but don't over-mix it; you don't want the air to come out of the egg whites. Pour into a buttered ovenproof dish, stand the dish in a roasting tin about a third full of water, then bake in your preheated oven for about 45 minutes until the top is set and spongy and it's a nice golden color.
