chicken salad. with apples & almonds.


Happy November! Can you believe it? Time goes by so fast. These are the last "quiet" moments before the holiday rush. So enjoy it, I know I will...

Anyway, here is a yummy, quick & healthy lunch or dinner...that shows-off the flavors of the season.

chicken salad with apples & almonds.
serves 2

2 cups cooked organic chicken, roughly chopped
1/2 cup of your favorite Mayonnaise (try to find sunflower oil based) or Vegenaise 
1/4 cup crunchy, crisp apples (I used Cortland), chopped
1 stick of celery, chopped
2 scallions, chopped
2 TBL roasted almonds, finely chopped
2 handfuls of greens
a pinch of dried tarragon
sea salt & cracked pepper
  1. Make a bed of greens on the bottom of two bowls. In a separate bowl, mix chicken, mayonnaise, apples, celery, scallions, tarragon & seasoning. 
  2. Scoop on top of the green. Sprinkle with a TBL of almonds over each. Serve.
