I know I just did a pb-choco combo cookie. But can there really be enough, the cookie monster asks?! This recipe is a conglomeration of a few different recipes in search of naturally gluten-free desserts (just trying to keep the wheat in-take minimal...). I love these cookies though-- no flour, no waiting for butter to soften. Easy, peasy.

flourless peanut butter & semi-sweet chocolate cookies.
makes 15 cookies
1 cup of smooth peanut butter
3/4 cup light brown sugar or coconut sugar
1 free-range egg
1 tsp vanilla
1 tsp baking soda
a pinch of sea salt
1 cup semi-sweet chocolate chips
- Preheat the oven to 350 degrees.
- In a mixing bowl beat together pb, sugar, egg & vanilla until creamy. Add baking soda & sea salt. Fold in the chocolate.
- Make little balls of dough & place them 1" apart on the baking sheet. Bake for 12-14 minutes. Cool for 5 minutes while they are still on the baking sheet, then transfer to a cooling rack.
