the long weekend. with family.

Breakfast with kiddos is like working in a diner, you never know which staple breakfast item you're going to have to whip up. These pancakes, with & without the blueberries worked for us.

 These classic chocolate chip cookies don't get the chips mixed in the dough, but just placed on top--randomly. Well at least when your 7 years old they do!

Luckily I learned early on in the weekend that taco nights really work well with kiddos. You can make all sorts of little things, then let them pick what they like. Everyone is happy. 


 vegan banana muffins

a great afternoon snack...

3 ripe bananas, mashed
1/4 cup vegetable oil
1/2 brown sugar
1/2 cup soy milk or almond milk
1 tsp pure vanilla

2 cups all-purpose flour or spelt flour
1 tsp baking soda
1 tsp cinnamon
a pinch of sea salt

1/2 cup chopped walnuts or pecans

--Preheat the oven to 350 degrees and line a muffin tin. 
--Mash the bananas & add oil, sugar & vanilla in a large bowl. 
--In a separate bowl combine the flour, baking soda, cinnamon & salt. Slowly add the dry ingredients into the wet, alternating with the milk. Don't over mix. Carefully fold in the nuts.
--Bake for 20-25 minutes until the center is cooked & the tops are nice & golden.
