I eat a variation of this granola most days for breakfast. It is simple & healthy & you can put all your favorite ingredients in! Store-bought granola is so expensive; but if you buy the ingredients for granola (which you will probably already have a bunch in your pantry) it can really stretch over quite a few batches. Plus, you know exactly what is in it! I serve mine with soy or almond milk & berries (that i keep in the freezer).
spiced granola.
makes 4 cups
2 cups organic rolled oats
1/2 cup sunflower seeds
1/2 cup pepitas (pumpkin seeds)
1 cup almonds or walnuts or pecans (or a combo), chopped
2 tsp. ground cinnamon
1 tsp. orange zest
a pinch of freshly grated nutmeg
a pinch of sea salt
- Mix together in a large bowl.
1/4 cup vegetable oil
1/4 cup pure maple syrup
1/4 cup honey
1 tsp. vanilla extract
- Combine with oats.
- Preheat the oven to 325 degrees. Spread oat mixture evenly on a foil-lined, greased baking sheet.
- Bake for 45 minutes or until golden. Stir every so often.
1/2 cup dried cranberries, chopped
1/2 cup raisins, chopped
1/3 cup dates, chopped
- When the granola is done baking, add dried fruit & let cool. Store in an air tight container for up to two weeks.
