I love love love Madeleine cookies (is that enough love?). They are French cookies that are cakey & soft. They are also the most adorable sea shell shape. I am eating one now as I blog with a mug of strong French Roast coffee.
I love love love Madeleine cookies (is that enough love?). They are French cookies that are cakey & soft. They are also the most adorable sea shell shape. I am eating one now as I blog with a mug of strong French Roast coffee.
Unfortunately you do need a Madeleine pan for this recipe. They are not very expensive--actually I think I got mine for $7. Anyway, they are very easy but look elegant. Oh, & yes, another cookie recipe. Who doesn't love cookies, though?
Lemon, Almond & Thyme Madeleine Cookies
makes 24
1 stick butter, melted & set aside to cool
3 organic free-range eggs, room temperature
2/3c sugar
1 tsp. vanilla extract
--combine ingredients in a bowl & with a mixer beat until yellow & fluffy.
1c all-purpose flour
1/4c cornstarch
1/2 tsp. baking powder
pinch of coarse sea salt
--whisk together in a separate bowl. Then with the mixer on a low speed add the dry ingredients into the wet, scrapping the sides of the bowl.
1/3c slivered almonds
2 tsp. fresh thyme leaves, picked
zest of a lemon
--gently stir into batter. Do not over mix.
--Preheat the oven to 375 degrees. Lightly butter & flour the Madeleine pan(s).
--put 1 TBL of batter in each mold. Bake for 10-12 minutes. When you touch the cookie it should spring back.
--let cookies cool on a wire rack & you can sprinkle with confectioner's sugar if desired.
