olive & tomato provincial salad. {gluten-free & vegetarian}

This is a simple summer salad. It is a great alternative to pasta or potato salad. Also there is minimal heat cooking so if it is hot (like it is today), it is not a lot of effort to make something yummy & healthy. 

Provincial Summer Salad.
serves 4 as a side or 2 as a lunch

2c cooked long-grain white rice 
8-10 grape tomatoes, cut into 4 little wedges
8-10 oil cured olives, torn
1/4c sweet onion, diced 

2 TBL olive oil
1 TBL balsamic vinegar
1 tsp. lemon zest
2 sprigs of thyme, leaves picked
2 sprigs oregano, leaves picked
sea salt & cracked pepper to taste
--combine & enjoy.
