sunday brunch.

on the table: roasted vegetables with creamy roasted pepper sauce & flatbreads. 

Simply chop up whatever vegetables you prefer & toss them in some extra virgin olive oil on to a baking sheet. Here I did potatoes, yellow pepper, sweet onions, tomatoes & garlic. Roast in a 450 degree oven for 25-30 minutes, until the veg are tender. Season to taste. Add a good pinch of dried oregano.

Toss into a food processor: 1/2 cup yellow or red roasted peppers from a jar, 1/4 cup plain Greek yogurt or sour cream, 2 TBL feta cheese, juice from 1/2 lemon, sea salt & cracked pepper. Blitz until smooth.
