apple. oatmeal. muffins.






'Tis the season, I suppose. These muffins are fluffy, not too sweet & a New England autumn in muffin-form. These are perfect for a quick breakfast or a mid-afternoon snack.

apple oatmeal muffins.
makes a dozen

1 organic egg
1 cup olive oil
1 cup organic whole milk
1/2 cup Maine maple syrup
1/2 cup light brown sugar
3 TBL plain yogurt
  1. In a large bowl, whisk ingredients together until combined.

2 cups all-purpose flour or white spelt flour
1 cup rolled oats
2 tsp. ground cinnamon
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. sea salt
  1. In a smaller bowl, sift ingredients together until well blended. 
1 large apple, peeled & chopped
  1. Preheat the oven to 400 degrees & line a muffin tin. Gently beat the dry ingredients into the wet ingredients, then fold in the apples. 
  2. Fill each paper to the top. Bake for 20-22 minutes. Cool on a rack for about 5 minutes before you start eating (the apples are like little hot pockets!).
