peach pie with brown sugar topping.
I made this for my brother Peter's birthday. I used a pre-made/frozen pie crust because the weather was very hot, but my usual pie crust recipe is here.

1 9" pie crust
--Preheat the oven to 350 degrees. Place pie crust into a dish & onto a baking sheet in case the juices overflow.

6 peaches, sliced
2 TBL organic sugar
1 TBL fresh lemon juice
--Toss together & place in the uncooked pie crust

1/2 cup brown sugar
1/4 cup all-purpose flour
6 TBL butter, diced
a pinch of sea salt
--Add in a bowl, combine until crumbly.
--Scatter over the peaches.

--Bake in the oven for 45-50 minutes until the top is golden & the peaches are jammy & bubbly on the sides.
--Let cool for at least an hour.

serves 2

2 peaches, diced
1 TBL spelt flour or all-purpose flour
--Preheat the broiler on high. Toss peaches & flour & put in 2 buttered ramekins.
--Place under broiler (on the lower rack so the peaches do not burn) for 6-8 minutes.

1/4 old-fashioned rolled oats
2 TBL Maine maple syrup
2 TBL olive oil
a pinch of sea salt
--In a bowl, stir the ingredients together until combined.
--Take the ramekins out of the oven & evenly divide topping over the peaches.
--Broiler for another 3-5 minutes on the lower rack, until golden. Serve with mascarpone.

vanilla-maple mascarpone:

1/4 mascarpone
1 TBL Maine maple syrup
1 tsp half-&-half or cream
1/2 tsp. pure vanilla
--Whisk together.

serves 1

1 peach, halved
--In a buttered ramekin, broil the peach for 5-7 minutes.

top with a scoop of greek yogurt (I used 0% Fage) with a drizzle of honey & pinch of cinnamon.
