Soda breads are popular in many countries as a type of quick bread. This is version of an Irish soda bread. It is "wicked" easy & can be eaten with breakfast, with soup, with a salad, a stew, or on it's own with some butter. I made two of these for a St. Patrick's Day get together this year & they were a huge hit. When I made this one, we ate the whole loaf in one day.
2 cups spelt flour or all purpose
1/4 cup organic sugar
1/2 baking soda
1/4 tsp sea salt
1/2 cup organic raisins, chopped

makes 1 loaf
1/4 cup organic sugar
1/2 baking soda
1/4 tsp sea salt
- Sift together in a bowl.
1/2 cup organic raisins, chopped
- Mix in slowly. Be careful not to over mix.
- Form dough into a round & cut a cross a 1/2" deep across the top.
- Lightly grease & flour a baking sheet. Preheat the oven to 450 degrees & bake for about 25-30 minutes.
- You can test it by sticking a wooden skewer or a knife in the center & if it comes out clean, you're golden!
