Sometimes breakfast for dinner is just so good. It's like comfort food. I am amping-up the breakfast with french fries and wine. Breakfast for dinner is also so easy & quick, which is nice on a weekday when you are tired & hungry.
Sometimes breakfast for dinner is just so good. It's like comfort food. I am amping-up the breakfast with french fries and wine. Breakfast for dinner is also so easy & quick, which is nice on a weekday when you are tired & hungry.
the menu.
4 organic free-range eggs, cooked over-easy
french fries
2 oranges, sliced (and for health measure)
red wine for the lady & lager for the gentlemen
(& more birthday cake for dessert!)

2 large potatoes, scrubbed
vegetable oil for frying (I used 2-3 inches in the pot)
maldon sea salt
- Cut potatoes in half horizontally; cut each half into 1/3-inch-thick fries.
- Place cut fries in a bowl of cold water; let soak 1/2 hour. Remove from water and dry thoroughly.
- Heat oil to 300° in a large heavy pot. Working in batches, fry potatoes, stirring occasionally, until lightly golden, 4 to 5 minutes.
- Drain fries on a cookie rack set on top of a sheet pan; let cool. Once you've fried all potatoes, raise heat to 375°. Working in batches, fry again until dark brown and crispy, 2 minutes.
- Drain on rack; sprinkle with salt and serve.
