I have been craving pancakes for weeks...so I finally gave in. These are fun because they have a little eastern European twist.
homemade applesauce.
makes approx. 4 cups
5-6 apples, peeled & chopped
2 TBL Maine maple syrup
1 TBL molasses
1/2 nutmeg, grated
a pinch of sea salt
- Combine all ingredients in a medium saucepan & fill with about 1-11/2 cup of water. Bring to boil. Reduce heat & simmer for about 20-25 minutes.
- Mash with a potato masher until desired consistency. Store in the refrigerator in jam jars for 2-3 weeks.
replace yogurt for sour cream, add 1 tsp. of cinnamon & eliminate blueberries & seed mix...
serve with lots of syrup, butter & warmed applesauce.
