lunch party. taco salads.





This is an easy lunch option for a crowd. Jenika & I pulled this together at camp--it was healthy & fulfilling (even for a bunch of boys). It also is only "chopping" intensive & is perfect for hot days when you want something fast & minimal. This works as a gluten free option & served buffet-style, people can pick & choose what they like...I think Franklin, here, likes it all. 

taco salad buffet-style.
serves 6-8

1 lb. ground free-range turkey
1 can black beans, drained & rinsed
olive oil
  1. Cook the turkey in a little olive oil over medium heat. You can use your favorite taco seasoning packet  & follow the directions or you can add a good pinch of the following: minced garlic, sea salt, cracked pepper, chili powder & cumin.
  2. When the meat is cooked through add the black beans. If you want to go for a vegetarian option. Just combine the spices with two different types of beans & cook until warmed through. 


4-6 cups of lettuce greens
1 red onion, diced
3 roma tomatoes, diced
1 avocado, diced
1 green pepper, diced
1/2 cucumber, peeled & diced
1 cup corn, parboiled for about 2 minutes & drained

olives
sour cream
hot sauce or taco sauce
shredded cheddar cheese or crumbled goat cheese
tortilla chips

  1. Put everything in little bowls & lay out on the table with bowls & forks for people to begin creating!
