So, this is a version of a cheese ball my mum used to make around the holidays. It is very rich and super addicting. Once a year is probably enough. It really simple and a great appetizer for a holiday party because it can be made a day or two ahead of time (although I roll the ball into the chopped nuts just before serving).
I made this one last time we went to visit Jediah's parents. They run a wonderful doggie-daycare/overnight place called Fresh Air Dogs. It is always fun playing & snuggling with all the pups that are there! It is not your average kennel--it is way more fun (I know my dogs LOVE visiting)!

the cheese ball.
2 packages organic cream cheese, room temperature
8 oz organic crushed pineapple, liquid squeezed
1/2 cup scallions, chopped
sea salt & cracked pepper
- Thoroughly combine ingredients and form into a ball.
- Wrap in plastic wrap & refrigerate for at least 1 hour.
1 cup pecans, finely chopped
- Put the pecans on a plate. Roll the ball in the pecans until evenly covered.
- Serve with your favorite crackers.
