Fresh local greens, sprouts, sweet clementines & creamy avocado...I'm in.
clementine & avocado salad.
serves 2
4 cups of mixed greens
1 avocado, sliced
1 cup of clementine slices from a can or jar
1/2 cup sprouts
2 scallions, chopped
1 TBL sesame seeds, toasted
- Toss all ingredients in a bowl with a 2 TBL of the citrus dressing. Serve the rest of the dressing on the side.

makes 3/4 cup
Juice from 1 lime
2 TBL juice from clementines
1 TBL rice vinegar
1 TBL pure maple syrup
1/3-1/2 cup of olive oil
a pinch of sea salt
- Add ingredients into a bowl & whisk until combined. Adjust taste by adding a little more maple syrup if you want it sweeter or a little more vinegar if you want it a little more zingy.
