mango avocado salsa.













Well, it is pretty snowy here in New England. In Western Maine, we have it pretty good though (except for the extreme wind!). I have heard that our coastal friends have not gotten off lightly in this snow storm.

This snowy day has inspired a little tropical snack to lighten up the mood. This is really good. Avocados and mangoes are in season, so give it a shot...I don't think you will be disappointed.

mango avocado salsa. 
makes 2 cups
adapted from Sprouted Kitchen Cookbook

1 mango, peeled, cored & diced
1 avocado, diced
juice of 1 lime
1 shallot, chopped
1 clove of garlic, chopped
1 tsp. red chili flakes or 1 fresh chili (chopped)
1/4 cup fresh cilantro, chopped
sea salt & cracked pepper

  1. Mix all ingredients in a large bowl. Serve immediately with tortilla chips or on tacos. You can make this ahead of time & store in the refrigerator for a few hours.
