Yesterday was the last day of classes. Whew. It has been a crazy-busy semester. Last night we had some friends over to take a deep breath & eat lots of food. I have been dying to try out Jamie Oliver's Empire Chicken from Jamie's Britain. It is a beautiful marriage between a roast chicken dinner & an Indian-inspired curry. You get everything from the gorgeous, marinated chicken, to Bombay roasted potatoes & spice infused gravy. Serve it family style, with some yogurt, naan & a crunchy salad--perfect! Even our vegetarian friend felt fulfilled with this yummy dinner. So fulfilled, he came back for pancakes this morning for breakfast.
